Big News

I haven't blogged in FOREVER~ I really have been busy. Some good busy and then some not so good. Moms Cancer came back and so I have spent a good amount of time traveling between Tacoma and Portland to see her. Shes on a rough road to recovery, but she is one TOUGH lady. *She doesn't think she is, but shes is definitely mistaken! I really am proud of her and know I am who I am because she made me so tough! <3 Also proud of my dad who so strongly stands by her side. Watching someone you love hurt so much must be one of the hardest things you can ever do in life. I truly am a LUCKY girl to have them as my parents. They are one of a kind! <3

Watching mom so sick made me want to evaluate my life and how I could make some changes to become healthier. I am a girl that LOVES good food, a Hungry American Girl for sure! ;) So in my quest for better health I watched some popular food Documentaries.....

They all brought up good reasons why I needed to "BACK AWAY from that Hamburger"!!!!! 

So I started a 6 month Detox~ I am doing my best to stay away from any foods that contain Sugar, Animal products (that means no eggs, dairy, meat, fish, ect.), and no foods that are highly processed (which means I am not buying very many canned/boxed foods) So far its going awesome!!!I have completed about at a month and a half and I have lost about 20Lbs I feel great and have a ton of energy. The hardest thing for me to give up was my coffee~ There are days where I miss it, but I don't want it like I did when I was actually drinking it. Back then I would wake up in the morning longing for that warm frothy latte, now its more of a coffee would be nice but oh well.  

So what do I eat???? I get that ALL the time, people curious as to what could this girl possibly EAT??? No MEAT, No SUGAR! Whats WRONG with her??? LOL  And what is she going to do after the 6 months? Well let me answer that first~ After the 6 months then I will occasionally have meat, because lets face it~ I am a farm girl and a good steak is a requirement occasionally. But for the most part I am going to stick to what I have started. Most days will be animal free. I will be posting some menu things on the bottom of this post if you want ideas. :) 

But before I get to that~ I bet your thinking to yourself....... That Krystal~ She spelled HUNGARY all WRONG!!!! She needs a MUCH better spell Check! Well Your right I did Spell Hungry wrong and I do need a better spell check because my spelling is ATROCIOUS!!! (yes I spell checked that cause I wrote it wrong the first time!) LOL But no I didn't spell it wrong in the new Blog title~ "Deployment Diaries" is switching Gears to "Hungary American Girl" Because as of Aug 31st this American girl is ~Leaving on a Jet plane~ Headed to Papa, Hungary with her family for our ultimate Air Force Adventure. I know some of you are sad but please don't be! This is such a huge blessing for our family and we will be back shortly to love on you all again! Where is Papa, Hungary? Well if you look at the map at the top of the page you will see the Capitol city Budapest........... Look Left........ See Gyor? We are 26 miles South of Gyor in a town that is about 33,000 people. We have lots to do to prepare~ We have already begun our spring cleaning and put items through the does it really need to move with us test. Watch for updates on "things that need a good home!" :) Oh and Please come visit! It will be so much fun!!! 

So here are a few meals that I have made. Goal is to add a few meals a week to inspire some of my friends who want to eat more like this but just dont know where to start.

I like to start my day off with a green smoothie
Looks odd~ But its full of vitamins 
2 C spinach
1 apple
1 kiwi
1 Banana
1C ice
1/2 C water
1/2 Cup frozen strawberries


This sandwich is on Ezekiel bread with a humus spread and 
sauteed mushrooms, peppers, onions, and spinach. 
(don't overcook the spinach or then it gets too strong of a taste, just warm it up slightly!) 
Uses spices that you love in this I used Sea Salt, Pepper, Red Wine Vinegar. 
 

Homemade Tomato Soup! YUM, Simple~ 
Veggie Broth, Tomatoes, Celery, Onion, Red Pepper
Boil, Once skin begins to peal and veggies are soft scoop out and 
remove tomato skins. Blend in blender season to taste.


Quinoa: Boil like rice
In fry pan place diced yellow peppers, onions, & jalapeno's
Saute till tender then add quinoa and saute till it begins to crisp.
(I like this on top of a spinach salad or served with butternut squash)


This was todays Lunch, its Quinoa & Rice noodles 
with sauteed Onions, Tomatoes & Cilantro with Italian seasoning.



        
Home made Taco Seasoning



Kale~ Very High in Calcium
This is my Fav variety but it can be very hard to find!
I ahve only found it at Whole foods and Marleen's
(Havent checked Trader Joes)


Red Beans & Rice with Taco seasoning on top of Kale

This is just a very small sampling of what we have eaten and only from days I remembered to 
snap a photo before it was all eaten. LOL

Now My fav so far!!!! 

Vegan Ranch

I was leery of this one....
But it turned out remarkable! 
1/2 cup cashews (blended to a powder)
1/2 cup cold water - Add 1/2 of the water to powder
1/2 sprig basil (I just used seasoning, about 3 shakes)
1/2 sprig dill (same just used seasoning)
1 T lemon juice
pinch of salt
add remaining water till its the thickness you prefer. 

Served with roasted potatoes~ 
Jared & the kids all LOVED this meal too! :)

  1. Mmmm! those recipes look super good! I think I might have to try some. Oh, and I heard you're making homemade almond milk, so cool! :D

  2. You are awesome! All of those movies are really educational (btw..it's Forks over Knives..not Knives Over Forks) and I wish I had that will power you do! My husband and I have been eating a plant based diet for a couple of weeks but after I sent him grocery shopping for the week, this week will definitely not be vegetarian :( I feel like some moderation can be good sometimes but it's back to the healthy eating next week!!
